Slow Cooker Chicken Chilli


Ingredients

1 tbs rapeseed oil

500g of chicken fillet

1 med onion, diced

1 red pepper, chopped

1 yellow pepper, chopped

½ cup of passata

1 punnet of cherry tomatoes

1 can of black beans, drained

1 can kidney beans, drained

½ cup of jalapeno, drained

1 cup frozen sweet corn

2 tbs chilli powder

1 tbs cumin

 Method

Heat the oil over medium heat and cook the chicken until brown. Add to the slow cooker with all other ingredients.

Cover and cook for 4 hours on high or 6 hours on low

Serve with a side of wholegrain rice – Selenium found in wholegrains can help boost the immune system. Add a dollop of Greek yogurt to boost the probiotics in this recipe too!
