Just a little on how I got here….
Many moons ago, I was sitting at my kitchen table with my Mum beside me pleading with me to eat my food (this was a very typical scene in our household around mealtimes)! I was the 3rd born out of six children. We were no different to any family, with mealtimes generally very busy with everyone around the table enjoying the lovely food my Mum and Dad prepared for us.
At some stage, I think I was about sixteen, I took a dislike to food and decided I was going to reduce my intake significantly enough to reduce my weight and “become thin”! This journey continued for many years and caused lots of pain and hurt to the people that loved me.
Eventually, I decided enough was enough and I wanted to change, I wanted to embrace life, live life, love food and more importantly understand food. I went back to college, did a course in nutrition, then a course in sports nutrition until eventually completing an MSc in Exercise & Nutrition.
I believe the big turning point for me was getting to really understand the ‘why to eat, what to eat and when to eat’. This removed all the fads of food from my life.
The past six years I have been working with both athletes and the general population on nutrition and fitness. That moment when a client reaches their goal means the world to me. I am sharing in their journey, I feel their joy, I feel their pain, I know the work and commitment it takes, and I love it.
I want to do this for the rest of my life and if I help one person today, then today is a good day.
My ever so patient husband, that had to learn very quickly how to take good photos and how to wait on me to photo every meal before he got to taste it. Anton has been with me through the entire journey since the beginning! We met in college. He helped me for many years when I struggled with food and helped me gain the confidence, I needed to get me where I am today. When I doubt or question myself, he always has the right thing to say, to hand.
Thank you, Anton, for loving me and for getting my sometimes-strange ways!
We have four beautiful children, Maria, Niamh, Roisin & Anton. This gang is undoubtedly the reason we are where we are today. I am so grateful to the each of them for the love, support, respect, and happiness each of these have brought to me throughout my life.
