INGREDIENTS
- 1 sweet potato
- 2 small onion
- 2 carrots
- 2 medium parsnips
- 1 clove of garlic
- 2 tablespoons of tomato purée
- 1kg lean stewing beef
- 63ml of red wine
METHOD
- Brown the beef and garlic in a little rapeseed oil.
- Add the wine and allow to boil for a few minutes to boil off the alcohol.
- Add all other ingredients to a large pot, add the beef and wine and cover ingredients with water.
- Bring to the boil and simmer for 90 minutes.
Tip: You can thicken this up with gravy granules if desired.
