Beef and Sweet Potato Stew


Per 342g serving (%RI):

Energy – 414 kcal (21%)

Fat – 11g (16%)

Salt – 0.33g (6%)


  • 1 sweet potato
  • 2 small onion
  • 2 carrots
  • 2 medium parsnips
  • 1 clove of garlic
  • 2 tablespoons of tomato purée
  • 1kg lean stewing beef
  • 63ml of red wine


  1. Brown the beef and garlic in a little rapeseed oil.
  2. Add the wine and allow to boil for a few minutes to boil off the alcohol.
  3. Add all other ingredients to a large pot, add the beef and wine and cover ingredients with water.
  4. Bring to the boil and simmer for 90 minutes.

Tip: You can thicken this up with gravy granules if desired.
