Blend 400g of rinsed chickpeas with 1 garlic clove, 1 teaspoon of cumin, 2tbsp of plain flour and 1 deseeded red chilli and 6 parsley leaves.
Once blended into a fairly smooth texture, shape into eight burgers. Fry on a hot pan with a little rapeseed oil for 2-3 minutes each side.
Serve with some fat free yoghurt (add a teaspoon of cayenne pepper to spice it up) and a side of homemade salsa.
The burgers are great in wholegrain pita bread with rocket, spicy yoghurt and salsa.
Roughly blend 4 deseeded tomatoes, ½ a red onion, 1 green pepper, deseeded, 1 garlic clove, 1tbsp lime juice and 2tbsp of pineapple juice.
