Simple Avocado salad

Toast walnuts and pine nuts until they slightly change colour.
Grate 2 carrots, 1 tbsp ginger and ½ raw beetroot and place in a large serving bowl. Grate a cucumber and courgette into ribbons and add to the bowl. Cut a firm avocado into cubes and add 2 cups of spinach leaves and 1 cup of beetroot leaves.
To dress the salads combine 2 tbsp of a quality extra virgin olive oil, 1tbsp of balsamic vinegar and the juice from ½ a lime.
Pour over the salad, with the roasted walnuts and pine nuts.
