Heavenly Feta With Dressed Beetroot

To make the dressing, add 2tbsp of white wine vinegar, 2tsp of honey and 1tps of wholegrain mustard to 1/3 cup of good quality extra virgin olive oil and mix well. Roast 2 tbsp of walnuts, crush and add to the dressing.
Chop a skinned pear in half and poach gently in some red wine.
Place some beetroot leaves on a plate. Chop a beetroot into cubes and sit the beetroot and pear on the leaves. Pour the walnut salad over the salad and sprinkle the flaked low fat feta and some roasted walnuts on top.
Simple but truly heavenly!
