Cooking Beets

Carefully rinse any soil that may be on the beets, avoiding damaging the skin as we can lose rich nutrients through the skin while cooking. Boil the beetroot fully intact with roots and leaves, placing the leaves out of the water preventing them from cooking. Bring the water to the boil and simmer for 45minutes to an hour. Add some lemon juice to the water to prevent the beets from bleeding nutrients.
Beet root is delicious on its own or adds great flavour to many salads and hot dishes.
